I LOVE Panera Bread. I can’t go long without craving their salads, but they are on the expensive side. So, I made my own replica at home. Just as tasty and fresh for way less money! :)

Copycat Panera Cobb Salad:

Salad-
Spinach
Lettuce
Grilled chicken
Crispy turkey bacon
Tomato
Hard boiled egg

Dressing-
1 tbsp olive oil
1/2 tbsp vinegar
1 tbsp dijon mustard

Snack- banana bread larabar

Lunch-  mixed green salad w/ chicken, black olives  and some honey mustard dressing, banana, handful of mixed nuts

Enjoyed a really nice chicken & escarole marinara pasta dish for dinner last night at a friends’ surprise birthday dinner and I am perfectly happy with that decision. I ate clean all day and enjoyed a nice treat :)

You know it’s bad when…

you’re not even hungry yet, but you’re watching the clock to see when it’s your next snack/meal time…..obsessed with being on a meal schedule, I guess :/

Thank you so much!! I am trying to post pictures of my meals more— maybe it’ll give people ideas of what to make (even though i know most of my meals are pretty plain!) and give people motivation, knowing that healthy food can be good!

I think on Sunday,

I will make some chicken and cut up some veggies for the following few days… Gotta prep for clean eating or you’re bound to cheat!

Work holiday “party”/get together today at 4pm..

We won’t be eating dinner but I’m not sure about drinks/appetizers— we will be at a restaurant… I’m also going to lunch with my manager— ahhhh it’s going to be really hard to not have any extra cheats!

I WILL SAY NO!!

Other meals!

Lunch- salad w/ chicken, banana

Snack- protein shake

Dinner- baked chicken breast (no skin), steamed edamame (no salt added), quinoa

Cheat of the day- 2 dark chocolate hershey kisses

Woohoo no extra points subtracted for the day!!

Challenge has begun!!!

Breakfast- Egg whites (probably equal to abouttt 2.5-3 eggs), grapes, vitamins, and water

Lunch & snacks are packed for tomorrow!

Planning on having egg whites and grapes for breakfast

Snack- peanuts

Lunch- salad w/ grilled chicken, banana

Pre-workout snack- protein shake

Dinner- ??? TBD!!

2nd night in a row

that I didn’t eat anything after dinner time :) After doing much reading, it sounds like a good idea not to eat for a few hours before bed time… also I’m giving my digestive system at least 10 hours of rest between dinner and breakfast. 

Hoping my work has healthy meal options for today and tomorrow since I will be eating lunch and dinner here today and breakfast and lunch here tomorrow due to our National Recruiting Meeting. 

I’ll probably have to stick to chicken and salads because I have no idea what the options will be like.

Intake so far!

Breakfast- Jimmy Dean D-lights turkey sausage egg white & cheese sandwich, vitamins

Lunch- mixed greens w/ cucumber and grilled chicken, pop chips and regular hummus w/ some hot sauce, handful of craisins

pretty good so far!! going to dinner later tonight with a friend so that may be a little bit of a splurge meal— we’ll see. saving my cals for that :)

Great start to the day…Intake :)

Breakfast- multigrain cheerios, strawberries, vitamins

Snack- TJ’s raisins

Lunch- Salad- mixed greens and turkey, hummus and some pop chips

Snack- banana

Not too freaking bad so far!

Most random dinner ever award goes to…

4 chicken breast tenders

steamed edamame 

classic hummus w/ hot sauce

small whole wheat pita

still delicious nonetheless!
